In Springfield we were given the recipe for Taco Soup. This stuff is the bees knees. I’m not kidding. It takes less effort to make than anything I’ve ever made for dinner, ever. It’s also cheap CHEAP, something like 8 dollars for a full crock-pot. AND it’s so filling a bowl full is ‘food baby’ filling. We eat it all winter, at least once a week.
Here’s the recipe:1 pound ground meat, Browned (I say meat because we use lean turkey but you could totally do beef or chicken) 1 can of each NOT DRAINED: Dark Red kidney beans Black beans Corn Ro-Tel Crushed tomatoes 1 large can Hominy, half drained (we’re talking the big can here) 1 packet Taco Seasoning 1 packet Ranch seasoning (we use the dip seasoning but either will do)
Toss all this in your crock-pot and stir. Cook on low for 8 hours or high for 4. We love to eat this with tortilla chips with some sour cream or cheese sprinkled on top.
